If you develop a craving for biscuits and must have them now, drop biscuits are quick and easy with light and airy results. They are tasty with sausage and gravy, jams and jellies, or laughing cow cheese (my latest obsession!).
This recipe can be found in Cooking Light Cookbook 1994. This cookbook is a classic, as is everything Cooking Light cracks out. Fifty years from now this book will still be part of my collection.
This recipe yields 1 dozen. Biscuits are 98 calories each.
- 1 1/4 cups all-purpose flour
- 1/3 cup yellow cornmeal
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chopped green onions
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground red pepper
- 1/4 cup plus 2 tablespoons skim milk
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 1 egg, lightly beaten
- Vegetable cooking spray
Preparation1) Preheat oven to 400 degrees.
I am quickly developing an addiction to bread baking. There is nothing more satisfying than to see a mixture of solid and liquid ingredients become flaky little biscuits you can hold in your hand.
